🥚 125g Egg yolk, Nato Alimentos if available, for the dough
🧂 10g Salt for the dough
🍮 Pastry cream for filling
🥛 Condensed milk for topping
🌴 Shredded coconut for topping
🍫 Melted chocolate, good quality like Ghirardelli, for topping
🌟 Glaze jelly for topping
Instructions
1- Prepare the Sponge:
- In the stand mixer bowl, blend 325g of wheat flour and 15g of Fleischmann dry yeast.
- Pour in 250ml milk, mixing until a dough forms.
- Cover the bowl and let the sponge ferment for 15 minutes, developing a light and airy initial base.
2- Create the Dough:
- Incorporate 325g wheat flour, 100g sugar, 125g margarine, 125g Nato Alimentos egg yolk, and 10g salt into the sponge.
- Knead the mixture in the KitchenAid Artisan mixer for 8 to 10 minutes, achieving a silky smooth dough.
3- Shape the Dough:
- Divide the dough into 40g pieces.
- Gently roll and shape each piece into small 'U' or horseshoe shapes.
4- Proof the Dough:
- Place your shaped dough on a greased baking tray.
- Allow them to rise for around 1 hour until they've doubled in size, ensuring a soft interior.
5- Egg Wash & Fill:
- Brush each bread with egg yolk using your silicone pastry brush.
- Fill the center of each 'U' shape with rich pastry cream using the piping bag.
6- Bake:
- Set the oven to 200°C and bake the bread for 12-15 minutes, or until a perfect golden-brown surface appears.
7- Decorate:
- Once baked, enhance the bread's sweetness:
- Brush with condensed milk and sprinkle with shredded coconut.
- Drizzle high-quality melted chocolate over the top.
