๐Ÿ 1 pack of long fusilli pasta

๐Ÿง‚ Salt and black pepper to taste
๐Ÿง€ 1/3 cup grated parmesan cheese

Instructions:

  1. Prep the Poblano Peppers:
    • Roast the poblano peppers over an open flame or in an oven until the skins are charred and blistered.
    • Place them in a plastic bag and let them sweat for 15 minutes. This will make peeling easier.
    • Once cooled, peel off the skins and remove the seeds. Chop them into small pieces.
  2. Cook the Pasta:
    • Bring a pot of water to a boil and add a generous pinch of salt.
    • Add the long fusilli pasta and cook according to package instructions until al dente.
    • Drain the pasta and run it under cold water to stop the cooking process. Set aside.
  3. Prepare the Sauce:
    • In a large skillet, melt the butter over low heat.
    • Add the minced garlic and finely chopped shallot, sautรฉing them until they are fragrant and translucent.
    • Stir in the chopped poblano peppers.
  4. Make it Creamy:
    • Pour a small amount of chicken stock into the skillet with the pepper mixture.
    • Add the cream cheese and stir until it melts into a creamy consistency.
  5. Combine and Season:
    • Slowly add the remaining chicken stock, stirring until the sauce is smooth.
    • Season with salt and black pepper to taste.
    • Mix in the grated parmesan cheese, ensuring it melts into the sauce.
  6. Finish the Dish:
    • Add the cooked fusilli pasta to the skillet and toss until the pasta is well-coated with the sauce.
    • Serve immediately, garnished with extra parmesan cheese if desired.
