Ingredients
🍚 1 cup Uncle Ben's Basmatí Rice
🫒 2 tablespoons Grace Virgin Coconut Oil
🧄 3 cloves garlic, minced
🧅 1 medium onion, chopped
🌶 1 red bell pepper, diced
🥕 1 large carrot, diced
🫘 1 cup peas fresh or frozen
🍅 1 can Grace Tomato Paste
🧂 1 teaspoon sea salt
🧆 1 tablespoon Caribbean Curry Powder Grace brand
🌿 1/2 teaspoon thyme
🧈 1 tablespoon butter
💧 2 cups water or chicken broth Swanson brand
Instructions
1- Prepare the Rice:
- Rinse the Uncle Ben's Basmatí Rice under cold water until the water runs clear.
- This helps to remove any excess starch and ensures fluffy rice.
2- Sauté Vegetables:
- In a large skillet or sauté pan, preferably Calphalon or T-fal, heat 2 tablespoons of Grace Virgin Coconut Oil over medium heat.
- Add the minced garlic and chopped onion, and sauté until translucent.
3- Add Vegetables and Spices:
- Add the diced red bell pepper, carrot, and peas to the pan.
- Stir in the Grace Tomato Paste, sea salt, Caribbean Curry Powder, and thyme.
- Cook for about 3-4 minutes, stirring occasionally, to let the flavors meld.
4- Cook the Rice:
- Add the rinsed rice to the pan, stirring to coat the grains with the vegetable and spice mixture.
- Pour in the water or Swanson Chicken Broth and bring to a boil.
5- Simmer:
- Reduce the heat to low, cover the pan with a lid, and let the rice simmer for about 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
6- Finish the Rice:
- Once the rice is cooked, remove it from the heat.
- Add 1 tablespoon of butter and gently fluff the rice with a fork to combine.
7- Serve:
- Transfer the seasoned rice to a serving dish.
- It can be served as a side dish or a main course.
