Dominican Stewed Pork (Cerdo Guisado Dominicano)

Ingredients
๐ 1 1/2 lbs 681g pork stew meat, diced
๐ง 2 teaspoons salt
๐ฟ 1 teaspoon dried oregano
๐ถ๏ธ 1/2 teaspoon black pepper optional
๐งก 1/2 teaspoon annatto bija or achiote powder
๐ถ๏ธ 1/2 Cubanelle pepper, minced
๐ 1/2 orange bell pepper, minced
๐ด 1/2 red bell pepper, minced

1/2 onion, minced
๐ง 2 cloves garlic, minced

1 tomato, deseeded and minced
๐ซ 3 tablespoons olive oil
๐ฅซ 1 cup tomato puree
๐ฟ Fresh cilantro, minced
Instructions
1- Season the Pork:
- In a stainless steel mixing bowl, combine diced pork with salt, dried oregano, black pepper, and annatto powder.
- Mix thoroughly to coat the pork evenly.
2- Brown the Pork:
- Heat olive oil in a stainless steel pan over high heat.
- Add the seasoned pork, spreading evenly in the pan.
- Brown on one side before flipping to brown the other.
3- Cook the Pork until Tender:
- Reduce heat to medium-low.
- Add a few spoonfuls of water to the pan and cover with a lid.
- Cook until the pork is tender, adding water as needed to prevent drying, for about 30 minutes.
4- Sautรฉ Aromatics:
- Once the pork is tender, add minced onion and garlic to the pan.
- Sautรฉ for about a minute until the onion turns translucent.
5- Add Peppers and Tomato:
- Stir in the minced Cubanelle, orange, and red bell peppers.
- Sautรฉ for another minute.
- Add the minced tomato and tomato puree, and stir well.
6- Simmer the Sauce:
- Add one cup of water to the mixture.
- Bring to a simmer, allowing the sauce to reduce by half and thicken to your desired consistency.
7- Finish and Garnish:
- Once the sauce is reduced, turn off the heat and garnish with freshly minced cilantro before serving.
