Instructions
1- Clean and Cut the Fish:
- Thoroughly clean the angle fish by removing scales and internal organs. Cut it into large, manageable pieces.
- Rinse thoroughly under running water.
2- Marinate:
- In a large stainless steel bowl, combine angle fish pieces with chopped garlic, a generous amount of salt, and 50 ml of white vinegar. Mix well so each piece is coated.
- Clean the dried tilapia by removing any loose scales or skin, and rinse them. Add to the marinating bowl.
- Cover and let marinate for 30 minutes.
3- Layer Ingredients:
- In a large pan, arrange the marinated angle fish and dried tilapia at the bottom.
- Add a layer of sweet potato leaves over the fish.
- Cover leaves with sliced tomatoes, eggplant rounds, and whole okra pods.
- Top with sliced onions and additional chopped garlic.
4- Season and Add Oils:
- Crumble a chicken cube over the mixture. Drizzle with palm oil and sunflower oil, and season with additional salt.
5- Start Cooking:
- Add 50 ml of water to the pan.
- Cover with a lid and place on medium heat on the stove. Allow vegetables to soften and stew to start bubbling.
6- Stir and Simmer:
- Once steam is visible, remove the lid and gently stir to mix flavors.
- Cover again and continue cooking until the fish is tender, vegetables are fully cooked, and the sauce is thick and flavorful.
7- Serve:
- Serve the stew hot with a side of pap for a traditional Angolan meal experience.
