Discover the traditional flavors of the Garifuna people with this simplified cassava bread recipe. Known as "The Cassava Eating People," the Garifuna have been perfecting this bread for generations. With this recipe, you can bring the authentic taste of Belize into your home using pre-packaged grated cassava for ease and convenience.
Ingredients
š 2 cups pre-packaged grated cassava, Yuca Cassava by Goya
š§ 1 teaspoon sea salt
š§ 2 tablespoons coconut oil, Vita Coco Organic Coconut Oil
Instructions
1- Prepare the Ingredients:
- Start by draining the grated cassava to remove any excess moisture. Place it in a clean kitchen towel and squeeze out as much liquid as possible.
2- Mix the Dough:
- In a mixing bowl, combine the drained cassava and sea salt. Mix well until the salt is evenly distributed.
3- Shape the Bread:
- Divide the mixture into four equal portions. Roll each portion into a ball and then flatten into discs about 1/2 inch thick.
4- Cook the Bread:
- Heat a non-stick skillet, Cuisinart Chef's Classic Recommended, over medium heat. Add coconut oil, letting it melt completely.
- Place the cassava discs into the skillet, cooking for about 6-8 minutes on each side until golden brown and slightly crispy.
5- Serve:
- Once cooked, remove the bread from the skillet and let it cool on a rack to ensure it remains crispy.
- Serve warm as a side to any Garifuna or Caribbean meal.
