Instructions
1- Prepare the Cream Base:
- In a non-stick pan, combine 2 cans of condensed milk, 2 boxes of heavy cream, and 90g of chopped white chocolate.
- Optionally add 1 tablespoon of corn syrup for added shine and texture.
- Stir and cook over medium-low heat, stirring continuously until the mixture thickens. It should resemble a point just before "brigadeiro".
- Remove from heat to prevent burning and transfer to a glass bowl. Cover with plastic wrap and chill until completely cold.
2- Create the Cheese Cream:
- Once the cream base is chilled, move it to a stand mixer bowl with a whisk attachment.
- Beat for about 2 minutes until aerated.
- Add 300g of cream cheese and continue to beat for 3 additional minutes until smooth and fluffy.
- Optionally, add 1 cup of diced fresh cheese and mix briefly to incorporate.
- Spread the cheese cream in a glass serving dish and refrigerate for 6 to 12 hours for it to set.
3- Make the Guava Paste Topping:
- Combine 350g guava paste and 1 cup of water in a pot.
- Cook on low, stirring until the paste melts into a smooth sauce.
- Cool until lukewarm.
4- Assemble and Garnish:
- Spoon the lukewarm guava sauce over the firm cheese cream, spreading evenly.
- Grate fresh cheese as a garnish around the edges.
- For Parmesan crisps, spread grated Parmesan in a non-stick pan, cook until golden, cool, and use as an optional garnish.
