Instructions
1- Brining Preparations (Night Before):
- Submerge the suckling pig in a brine solution made with water and coarse salt. Ensure it is fully covered and refrigerate overnight.
2- Preparation (Next Day):
- Preheat your oven to 150°C (302°F).
- In a small bowl, mix minced garlic with vinegar, lime juice, paprika, cinnamon, and a dash of salt to create a marinade.
- Remove the pig from the brine, pat it dry, and rub the marinade all over its surface, ensuring even coverage.
- Fill the cavity of the pig with sliced onions, carrots, rosemary, and whole cloves.
3- Roasting:
- Place the pig on a roasting rack lined with aluminum foil in a suitable roasting pan.
- Place in the preheated oven and roast for 2 hours and 30-45 minutes.
4- Basting:
- During roasting, every hour, remove the pig and baste with the reserved marinade mixed with some of the pig's cooking juices. Optionally, add a tablespoon of butter or lemon-infused oil for additional flavor.
- After the second hour, check if the skin is becoming crispy.
5- Final Touches:
- Once cooked through and the skin is golden and crispy, let it rest for 15 minutes before carving and serving.
