Ingredients
๐ 3 large aubergines eggplants
๐ถ๏ธ 3 red bell peppers
๐ง 3โ4 garlic cloves minced
๐ซ 2 tbsp olive oil generic brand shown
๐ฟ 2 tbsp fresh parsley finely chopped Sainsbury's Fresh Parsley

200g chopped tomatoes or salsa Old El Paso Cooking Sauce - Happy Mex variety

Instructions
1- Roast Vegetables:
- Preheat the oven to 200ยฐC 180ยฐC fan or gas mark 6
- Wash and dry the aubergines and bell peppers thoroughly
- Place the vegetables on a foil-lined baking tray
- Cover the vegetables with kitchen foil, sealing it to create a steaming environment
- Roast in the oven for 1 hour, until soft
2- Prepare Aubergines:
- Remove the tray and transfer the hot aubergines to a bowl
- Split each aubergine lengthwise with a knife and sprinkle them with salt inside generously
- Add the roasted peppers to the bowl and cover them with a lid to steam for 1โ2 hours
3- Peel Vegetables:
- Peel the peppers, removing the seeds
- Scrape out the aubergine flesh
4- Prepare Garlic:
- Crush the garlic with a peeler and grater or mincer, mixing with salt
5- Combine Ingredients:
- Chop the peeled peppers finely, and do the same with the scraped aubergine flesh
- Combine in a pot: mashed garlic, chopped peppers, and chopped aubergine, mashing until chunky
- Add the salsa and mash again until combined
- Stir in the olive oil and finely chop the parsley
6- Final Touches:
- Mix thoroughly, adjusting salt to taste
- Serve immediately or store in jars for later use
