Ingredients
🥬 600g Fresh Spinach, alternatively, 400g of frozen spinach
🌰 30g Pine Nuts, European or Iberian recommended
🍇 50g Seedless Raisins, use a mix of Corinto, Sultanas, and Moscatel varieties
🧄 2 large cloves Garlic, or 3 medium cloves
🫒 2 tablespoons Olive Oil
🧂 1/4 teaspoon Salt
Instructions
1- Prepare the Spinach:
- Wash and chop the fresh spinach if not already done.
- If using frozen spinach, ensure it is thawed and drained.
2- Cook the Spinach:
- Heat a frying pan on medium heat and add 2 tablespoons of olive oil.
- Add the spinach to the pan followed by the salt.
- Sauté by constantly stirring until the spinach reduces in volume, releases its moisture, and turns slightly browned. This should take about 3-4 minutes.
- Once done, transfer the spinach to a bowl and set aside.
3- Prepare the Aromatics & Nuts:
- In the same pan with retained oil, slice the garlic cloves thinly.
- Sauté the garlic over medium heat for about 1 minute until it turns lightly golden, carefully avoiding burning.
- Add the pine nuts and raisins, stirring continuously, and cook for an additional minute until the nuts are slightly golden.
4- Combine Ingredients:
- Return the cooked spinach to the pan with the sautéed garlic, pine nuts, and raisins.
- Stir all ingredients together over medium heat for about 1-2 minutes to meld flavors and heat through.
5- Serve:
- Transfer the dish to a serving plate and serve immediately.
