Ingredients
Dough:
🌾 1 ½ cups of wheat flour 205g
🧬 7.5g of dry biological yeast, Fleischmann Fermento Biológico Seco Instantâneo or 23g of fresh biological yeast
🍚 2 tablespoons of sugar 25g refined sugar
🥄 3 tablespoons of oil 40ml or substitute with butter/margarine
🧂 ½ teaspoon of salt 3g
🥛 ⅓ cup of cold milk 65ml
🥄 1 teaspoon of baking powder 4g
🥚 1 large egg 50g
Filling:
🥛 ½ can of condensed milk 200g
🌽 ¼ cup of cornstarch 25g Maizena
🥄 ¼ cup of cream 50g cream from a carton
🥚 3 sifted egg yolks 45g
🍦 1 teaspoon of vanilla essence 5g
🍚 1 cup of sugar 185g refined sugar
🥛 1 ½ cups of milk 320ml
For Coating/Frying:
🥄 Oil for frying
🍚 União Glaçúcar powdered sugar, optional for coating
Instructions
1- Prepare the Dough:
- In a large clear glass mixing bowl, combine wheat flour and dry biological yeast. Mix by hand.
- Create a well in the center and add sugar, oil, salt, cold milk, baking powder, and egg.
- Combine by hand until you have a sticky dough.
- Transfer to a lightly floured surface and knead for about 15 minutes until smooth and elastic.
- Shape into a ball, cover, and let it rise in a warm place until it triples in size (approximately 1 to 1.5 hours).
2- Prepare the Filling:
- In a metal pot, mix condensed milk and cornstarch until smooth.
- Add cream, sifted egg yolks, vanilla essence, sugar, and milk.
- Cook over medium-high heat, stirring continuously until thick and creamy.
- Remove from heat and let cool completely.
3- Frying the Dough:
- Deflate the dough gently, divide it into 12-16 equal pieces, and shape them into smooth balls.
- Let the balls rise for another hour on a greased metal baking tray.
- Preheat oil in a deep pot to medium-high heat.
- Fry the dough balls until golden brown on both sides. Drain on paper towels.
4- Assemble and Serve:
- Once cooled, make a cut in each dough ball to create a pocket.
- Fill a piping bag with the custard and fill each sonhos with the creamy mixture.
- Optionally, roll in União Glaçúcar or sprinkle it on top.
- Serve immediately for the freshest taste.
