Charquicán is a classic dish from Chile, a comforting and hearty stew that marries the earthy flavors of ground beef, potatoes, and pumpkin with an array of colorful vegetables. Topped with a fried egg, this traditional Chilean entrée is a celebration of wholesome ingredients and vibrant flavors.
Ingredients
🌶️ 50g bell pepper, Pimentón
🥕 70g carrot, diced, Zanahoria
🌽 100g corn, Choclo
🧅 200g onion, diced, Cebolla (one large)
🥦 100g peas, Alverjas
🔪 100g green beans, Porotos Verdes
🥔 700g potatoes, cut into wedges, Papas
🎃 350g pumpkin/squash, cubed, Zapallo
🥩 350g ground beef, Carne molida
🌿 2 tbsp dried oregano, Orégano
🌶️ 1/2 tbsp paprika/chili powder, Ajo color
🌿 1/2 tbsp ground cumin, Comino
🧄 1 clove garlic, crushed, Ajo
🧂 1 tbsp salt, Sal
🫒 3 tbsp olive oil, Aceite de oliva
🍳 1 fried egg, Huevo frito for serving
🍅 Tomato, diced for serving, Tomate
Instructions
1- Prepare Ingredients:
- Dice the onion, bell pepper, and carrot. Cut potatoes into wedges and pumpkin into cubes.
- Crush the garlic clove for sautéing.
2- Cook the Base:
- Heat 3 tbsp olive oil in a non-stick frying pan over medium heat.
- Add crushed garlic and diced onion, sauté until onions are translucent (~10 mins).
3- Brown the Beef:
- Incorporate the ground beef into the pan with onions and garlic. Break apart with a wooden spoon.
- Season with paprika, cumin, salt, and oregano. Cook until beef is browned, about 15-20 minutes.
- Set the cooked beef mixture aside.
4- Cook Vegetables:
- In a separate cooking pot, bring water to a boil.
- Add potatoes to boiling water, followed by pumpkin, seasoning with salt. Partially cover the pot.
- Cook until potatoes and pumpkin are tender, adding corn, peas, green beans, and carrot. Continue cooking for another 10 minutes.
- Drain excess water from vegetables.
5- Combine and Mash:
- Add the reserved beef mixture to the pot with vegetables.
- Mash some potatoes and pumpkin with a wooden spoon, creating a stew/mash consistency.
6- Serve:
- Ladle Charquicán into a serving bowl.
- Top with a fried egg with a runny yolk.
- Serve with diced tomato and parsley salad on the side.
