Ingredients
π 1 cup raisins, chopped finely
π 1/2 cup currants, chopped finely
πΎ 2 cups all-purpose flour
πΎ 1 cup whole wheat flour
π― 1/2 cup brown sugar
π§ 1/4 cup softened margarine/butter
π₯ 1 cup warm milk (substitute with coconut milk if desired)
π 1/2 cup glazed cherries, diced
π 2 tablespoons lime peel, diced
π« 2 tablespoons vegetable oil
π 1 teaspoon cinnamon powder
π° 1/2 teaspoon grated nutmeg
πΏ 1/2 teaspoon cloves powder
π§ 1/2 teaspoon salt
π 2 teaspoons yeast
π₯ 1 teaspoon Blanches Clear Vanilla Essence Concentrated
Instructions
1- Prepare Dried Fruits:
- Finely chop the raisins and currants on a wooden chopping board.
- Set aside in a bowl.
2- Mix Dry Ingredients:
- In the KitchenAid stand mixer bowl, add all-purpose flour, whole wheat flour, brown sugar, softened butter, chopped raisins and currants, diced glazed cherries, lime peel, cinnamon, nutmeg, cloves, salt, and yeast.
3- Initial Mixing:
- Attach the dough hook to the stand mixer.
- Whisk dry ingredients at low speed to combine.
4- Add Wet Ingredients:
- While mixing on medium speed, gradually add vanilla essence, vegetable oil, and warm milk to the dry mixture.
5- Knead Dough:
- Increase mixer speed to medium-high.
- Knead for 8 minutes until the dough forms and is soft.
6- First Proof:
- Grease a stainless steel mixing bowl lightly with oil.
- Place dough in the bowl, cover with a damp cloth, and allow it to double in size in a warm place.
7- Deflate and Knead Again:
- Once doubled, press the dough gently to deflate.
- Knead again in the stand mixer for 3 minutes.
8- Shape Dough:
- On a lightly floured surface, form the dough into a loaf.
9- Second Proof:
- Place in an oiled, gold-colored loaf pan.
- Let rise for 45 minutes in a warm area.
10- Bake:
- Preheat oven to 350Β°F (175Β°C).
- Bake loaf for about 35-40 minutes until golden brown.
11- Cool and Serve:
- Remove from oven.
- Allow to cool completely on a wire rack before slicing.
