Ingredients
š¾ 2 kg SELECTA all-purpose wheat flour
š§ 1/2 kg Reina de la Tortilla vegetable shortening
š§ 30 grams fine salt
š¶ Extra vegetable shortening for greasing the dough balls
š§ Approximately 1.5 liters room temperature water
Instructions
1- Prepare Shortening:
- In a large wooden bowl, soften 1/2 kg of Reina de la Tortilla vegetable shortening with your hands.
- Ensure the shortening is smooth and free of lumps.
2- Mix Dry Ingredients:
- Add 2 kg SELECTA all-purpose wheat flour to the softened shortening.
- Add 30 grams of fine salt.
3- Combine to Form Mixture:
- Mix thoroughly with hands.
- Aim for a uniform, crumbly consistency.
4- Add Water and Knead:
- Create a well in the center of the dry mixture.
- Gradually add room temperature water while kneading for approximately 2 minutes.
5- First Resting:
- Form the dough into a ball.
- Place the dough back in the bowl and cover with plastic wrap and a kitchen towel.
- Let it rest for 5-10 minutes.
6- Form Dough Balls:
- Divide the dough into small balls: approximately 50g for burritos and 25-30g for tacos.
7- Second Resting:
- Lightly grease a metal tray with extra shortening and place dough balls on it.
- Cover and let them rest for around 20 minutes.
8- Prepare Comal:
- Heat the large comal over a wood fire until adequately hot, about 20 minutes.
9- Flatten Dough:
- Lightly dust each dough ball with flour.
- Use hands or a manual tortilla press to flatten into thin, round tortillas.
10- Cook Tortillas:
- Place flattened tortilla on hot comal.
- Cook until edges set and color changes, flip with spatula.
- Continue cooking until golden-brown spots form.
11- Cool and Store:
- Remove tortillas to a flat surface to cool.
- Ensure separation to prevent sticking.
- Allow them to rest for at least 30 minutes before packaging.
