Ingredients

🌽 2 cans 15.25 oz each Green Giant Supersweet Corn, drained
🧂 ½ teaspoon salt
🧈 4 tablespoons unsalted butter, melted Land O'Lakes recommended
🌽 1 cup Bob's Red Mill Cornmeal

Instructions

1- Prepare the Filling:

Drain the canned corn thoroughly to ensure your dukunu does not become too moist.

2- Blend Ingredients:

In a Blendtec blender, add the drained corn, salt, melted butter, and cornmeal. Blend until the mixture is smooth, with a slightly coarse texture to mimic the authentic dukunu feel.

3- Wrap and Shape:

Cut several pieces of aluminum foil, each about 10x10 inches.
Spoon about half a cup of the corn mixture onto the center of each foil piece. Fold and seal the foil carefully to form a neat packet, ensuring no mixture seeps out.

4- Cook:

In a large pot, bring water to a boil.
Carefully place the foil packets into the boiling water. Reduce the heat to a simmer. Cover and let them boil for 40 minutes.

5- Serve:

Carefully remove them from the pot using tongs. Let them cool slightly before serving.
