Dukunu is a traditional Belizean dish often enjoyed as a sweet and savory treat. In this modern twist, we use canned corn to simplify the preparation process, making it quicker without sacrificing flavor. This recipe provides a convenient and delicious way to enjoy dukunu any day of the week.
Ingredients
š½ 2 cans 15.25 oz each Green Giant Supersweet Corn, drained
š§ ½ teaspoon salt
š§ 4 tablespoons unsalted butter, melted Land O'Lakes recommended
š½ 1 cup Bob's Red Mill Cornmeal
Instructions
1- Prepare the Filling:
- Drain the canned corn thoroughly to ensure your dukunu does not become too moist.
2- Blend Ingredients:
- In a Blendtec blender, add the drained corn, salt, melted butter, and cornmeal. Blend until the mixture is smooth, with a slightly coarse texture to mimic the authentic dukunu feel.
3- Wrap and Shape:
- Cut several pieces of aluminum foil, each about 10x10 inches.
- Spoon about half a cup of the corn mixture onto the center of each foil piece. Fold and seal the foil carefully to form a neat packet, ensuring no mixture seeps out.
4- Cook:
- In a large pot, bring water to a boil.
- Carefully place the foil packets into the boiling water. Reduce the heat to a simmer. Cover and let them boil for 40 minutes.
5- Serve:
- Carefully remove them from the pot using tongs. Let them cool slightly before serving.
- The dukunu can be served as is or as a side to your favorite stew.
