Ingredients
š„„ 1 whole coconut for grated coconut and water
š 1.5 cups white granulated sugar
Instructions
1- Prepare the Coconut:
- Use a cleaver or machete to crack open the whole coconut. Drain the coconut water into a plastic container.
- Strain the coconut water through a sieve into a glass bowl to remove impurities.
2- Grate the Coconut:
- Split the coconut and use a metal box grater to grate the white meat. Collect the grated coconut in glass bowls.
3- Caramelize the Sugar:
- Place the granulated sugar in a metal cooking pot over medium heat.
- Stir the sugar continuously with a wooden spoon until it melts and turns into a golden caramel.
4- Add Coconut Water:
- Carefully pour the strained coconut water into the pot once the sugar is fully caramelized. The mixture will bubble intensely.
5- Dissolve the Caramel:
- Continue stirring until all the caramelized sugar dissolves back into the liquid, forming a consistent syrup.
6- Thicken the Syrup:
- Cook the syrup for a short time until it slightly thickens.
7- Incorporate the Grated Coconut:
- Add the grated coconut to the pot. Stir continuously as the coconut gets coated in the syrup.
8- Cook the Cocada Mixture:
- Keep cooking and stirring until the liquid reduces, and the mixture thickens to a deep, glossy, amber color. Ensure to avoid over-caramelizing at the start, as it darkens further.
9- Optional Step:
- If desired, add condensed milk at this stage for extra creaminess.
10- Finish Cooking:
- Once you achieve the desired consistency, remove the pot from heat.
11- Shape the Cocadas:
- Use a metal spoon to scoop portions of the hot mixture onto a serving tray and shape them into discs or mounds.
12- Cool and Serve:
- Allow the cocadas to cool and set before serving.
