Instructions:
1. Slice each jalapeño pepper in half lengthwise and remove the seeds and membranes with a spoon, creating a cavity for the cheese filling. Be sure to wash your hands thoroughly after handling the peppers, or wear gloves to prevent irritation.
2. In a mixing bowl, combine the grated cheese and softened cream cheese along with the onion powder and a pinch of salt. Mix until you have a smooth paste.
3. Stuff each jalapeño half with the cheese mixture, making sure they’re well filled but not overflowing.
4. Prepare your breading station with three shallow bowls. In the first bowl, place the flour. In the second bowl, whisk together the eggs and a splash of milk. In the third bowl, combine the Italian flavored breadcrumbs with paprika.
5. Carefully dip each stuffed jalapeño first into the flour, coating evenly and shaking off the excess. Then dip into the egg wash, and finally, coat well with the breadcrumb mixture.
6. Heat the vegetable oil in a frying pan or deep fryer to 350°F (175°C). Once the oil is hot, fry the poppers in batches, careful not to overcrowd the pan, until they are golden brown and crispy, about 3 to 4 minutes.
7. Remove the poppers from the oil with a slotted spoon or frying spatula and place them on paper towels to drain any excess oil.
