Ingredients
For the Dough:
š„ 3 eggs
š„ 300 ml warm milk
š§ 20 g dry biological yeast (2 sachets of 10g each)
š¬ 8 tablespoons refined sugar
š§ 2 tablespoons butter
š„ 2 tablespoons powdered milk
š§ 1 pinch of salt
š¾ Approximately 800 g wheat flour
š 1 guava paste, diced
For the Crumble (Farofa):
š¾ 1/2 cup wheat flour
š¬ 1/2 cup refined sugar
š§ 2 tablespoons butter
For Brushing:
š„ 1 egg yolk
Instructions
1- Activate the Yeast:
- In a small bowl, mix the 20g dry yeast with a portion of the 300 ml warm milk. Let it sit until bubbly.
2- Mix Wet Ingredients:
- In a large bowl, whisk together the eggs and refined sugar until well combined.
3- Incorporate Dairy:
- Add the butter and powdered milk into the egg mixture and whisk until smooth.
4- Combine Yeast and Milk:
- Add the activated yeast and the remaining milk to the bowl. Stir well.
5- Form the Dough:
- Gradually add wheat flour, mixing initially with a spatula until the dough is firm.
- Knead on a floured surface for about 5 minutes until dough is slightly sticky but not clinging to hands.
6- First Rise:
- Place the kneaded dough back in the bowl, cover it with a cloth, and let it rise for about 1 hour or until doubled in size.
Prepare the Crumble (Farofa):
1- Mix Crumble Ingredients:
- In a small bowl, combine flour, sugar, and butter.
- Mix with a spoon until crumbly.
- Chill the crumble mixture in the refrigerator.
Assemble the Cuca:
1- Deflate the Dough:
- After the dough has risen, gently punch it down and divide it into two portions.
2- Shape the Dough:
- Roll each portion into a rectangle and evenly sprinkle with diced guava paste.
3- Roll and Transfer:
- Roll each rectangle into a log and place them in greased and floured loaf pans.
4- Add the Toppings:
- Brush rolled dough with egg yolk, sprinkle with crumble, and top with extra guava paste pieces for garnish.
5- Bake:
- Place pans on a baking tray and bake in a preheated oven at 180°C until golden, about 25-35 minutes.
After Baking:
1- Unmold and Cool:
- Remove from the oven and unmold the cuca while still warm.
- Allow to cool slightly before slicing.
2- Serving Suggestions:
- Enjoy with a small cup of coffee to complement its sweet flavors.
