Ingredients

🐟 5-7 slices 3 pounds of kingfish, cleaned and washed with lemon juice
🌿 1 tablespoon Caribbean Green Seasoning
🧂 3/4 tablespoon sea salt divided for fish and sauce
🌶️ 3/4 teaspoon black pepper divided for fish and sauce
🌾 3/4 cup all-purpose flour
🛢️ 2 cups vegetable oil for shallow frying
🧅 2 large onions, thickly sliced into rings
🥕 1/2 carrot, julienned into matchsticks
🌿 6-8 whole pimento berries allspice
🧄 2 garlic cloves, sliced
🌶 1 scotch bonnet pepper half sliced, seeds removed for less heat, plus one piece with seeds for aroma
🌈 Assorted bell peppers red, green, yellow, sliced into strips
🍶 1 1/2 cups white vinegar
🍚 2 tablespoons white sugar

Instructions

1- Prepare the Kingfish:

• Clean the kingfish slices thoroughly with lemon juice and cool water, then drain well.

2- Season the Fish:

• Place the kingfish in a glass bowl.
• Season with 3/4 teaspoon black pepper, 3/4 tablespoon sea salt, and 1 tablespoon Caribbean green seasoning.
• Mix to coat evenly.

3- Coat the Fish:

• Dust each fish slice with all-purpose flour.
• Shake off excess.

4- Fry the Fish:

• Heat vegetable oil in a non-stick frying pan over medium heat.
• Fry kingfish slices in batches, about 3-4 minutes per side, until golden brown.
• Drain on paper towels.

5- Prepare Escovitch Sauce:

• In a separate saucepan, combine white vinegar, carrot, and pimento berries.
• Bring to a simmer over medium heat.

6- Add Seasonings:

• Add remaining black pepper, sea salt, and white sugar to the sauce.
• Stir to combine.

7- Add Vegetables:

• Add scotch bonnet pepper, bell peppers, onions, and garlic to the simmering sauce.
• Gently toss and simmer on medium-low heat for about 7 minutes.

8- Finalize Cooking:

• Turn off the heat and let the sauce steep.
• Spoon warm escovitch sauce generously over the fried fish arranged on a serving platter.
