Experience a delightful combination of flavors and textures with these easy-to-make crispy tuna cakes. Perfect as an appetizer or a main dish, they are crispy on the outside and tender on the inside. Pair them with red rice or a lentil soup for a comforting meal reminiscent of traditional Spanish cuisine.
Ingredients:
- 🐟 1 (12oz) can of Tuna in water, drained
- 🧅 1/6 onion, chopped very small
- 🌿 1 teaspoon dry cilantro leaves
- 🌶️ 1 teaspoon red chili pepper flakes
- 🥚 2 large eggs
- 🌽 3 tablespoons cornstarch
- 🧂 Salt, to taste
- ⚫ Black pepper, to taste
- 🥄 Favorite cooking oil, for frying
Instructions:
- Prepare the Tuna Mixture: In a large mixing bowl, add the drained tuna. Use a fork to break down the large chunks.
- Add Seasonings: Mix in the chopped onion, dry cilantro leaves, red chili pepper flakes, salt, and black pepper. Stir together to combine the flavors evenly.
- Bind the Mixture: Add the two large eggs to the bowl and mix until incorporated. This will help bind the tuna mixture.
- Add Cornstarch: Gradually add the 3 tablespoons of cornstarch, mixing well until the mixture holds together and can be formed into cakes.
- Shape the Cakes: Divide the mixture into five equal portions and shape each into a patty of your preferred size.
- Fry the Tuna Cakes: Heat your favorite cooking oil in a skillet over medium heat. Once the oil is hot, gently place the tuna cakes into the skillet. Fry each side for about 3-4 minutes or until golden brown and crispy.
- Serve: Once cooked, transfer to a paper towel-lined plate to absorb any excess oil. Serve the crispy tuna cakes while hot, with red rice or lentil soup on the side for a complete meal.
