Ingredients
For the Dough:
🥚 1 egg
🍚 2 cups all-purpose flour
🧂 1 tbsp salt
❄️ Cold water
For the Filling:
🌿 2 branches of leeks or chives
🧂 Salt
🌶️ Pepper
🌿 1 tsp coriander seeds ground
🌶️ 1/2 tsp chili flakes
🫒 1 tbsp olive oil
For the Sauce:
🫘 1 cup canned kidney beans Goya Kidney Beans
🧅 1 large onion
🍅 1 cup tomato purée Mutti Tomato Purée
🧂 Salt
🌶️ Pepper
For the Yogurt Sauce:
🥛 1 cup Greek yogurt FAGE Total Greek Yogurt
🧂 Salt
🧄 2 cloves garlic crushed
For Frying and Garnish:
🧄 6 cloves garlic
🫒 Olive oil
🌿 1 tbsp dry mint
🌶️ 1 tsp chili flakes
Instructions
1- Prepare the Dough:
- In a mixing bowl, combine 2 cups of all-purpose flour, 1 egg, and 1 tbsp of salt.
- Gradually add cold water while mixing until a medium-soft dough forms.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
2- Prepare the Filling:
- Thoroughly wash and finely chop the leeks or chives.
- In another bowl, mix the chopped leeks with salt, pepper, ground coriander seeds, chili flakes, and olive oil until well combined.
3- Roll Out the Dough:
- Roll out the rested dough using a rolling pin or a pasta machine into a thin sheet.
- Cut the dough into circles using a cookie cutter or a glass.
- Place a small amount of leek filling in the center of each circle, moisten the edges with water, fold over, and seal tightly.
4- Make the Sauce:
- Sauté one finely chopped onion in oil over medium heat until translucent.
- Add 1 cup of tomato purée, salt, and pepper, then stir in the kidney beans. Cook until the sauce slightly thickens.
5- Prepare the Yogurt Sauce:
- In a bowl, mix Greek yogurt with a pinch of salt and crushed garlic until smooth.
6- Fry the Garlic:
- In a small pan, heat olive oil and fry 6 cloves of garlic until lightly golden. Be careful not to overcook them.
7- Cook the Dumplings:
- Bring a large pot of water to a boil.
- Gently add the dumplings and cook for 3–5 minutes or until they float and are cooked through. Drain well.
8- Assemble and Garnish:
- Layer a serving dish with creamy yogurt sauce, followed by a layer of dumplings.
- Top with more yogurt sauce, kidney bean sauce, and garnish with fried garlic, dry mint, and chili flakes.
