Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes
Servings: 2
Instructions:
1. Turn the stove on to a medium-high heat and place your frying pans on the burners. Add a little vegetable oil in each pan to coat the base.
2. Begin with sausages, as they take the longest to cook. Place them in one of the pans and let them sizzle away while you turn your attention to the other ingredients.
3. On your chopping board, tackle the mushrooms next. Slice them evenly and set them aside.
4. Place the mushroom slices into the second frying pan and let them start to soften and brown.
5. As the sausages cook, monitor their progress, turning them occasionally to ensure they brown on all sides.
6. Once your sausages have developed a nice colour, transfer them to a heat-proof dish and keep them warm in the preheated oven.
7. In the same pan used for sausages, lay the bacon slices and cook until they reach your desired crispiness.
8. As the bacon cooks, slice your soda bread and potato bread, setting them aside.
9. Take your halved tomatoes and, when there's space, add them to one of the pans to start grilling, seasoning with salt and pepper.
10. Remove the bacon once done, adding it to the oven with the sausages to keep warm.
11. Use the residual fats in the pans to fry your soda and potato bread slices, adding more oil if necessary.
12. Now, for the eggs. Crack them into the pan, being careful not to break the yolks, and fry to your liking.
13. As each component finishes cooking, transfer it to the oven dish to maintain warmth.
14. Serve the sausages, bacon, fried eggs, soda and potato breads, mushrooms, tomatoes—and if you're using them, black and white pudding—on warm plates.
15. Enjoy this magnificent feast with a pot of strong tea or your favorite coffee to start your day in true Irish style.
Cooking Tips:
- Keep the heat consistent but monitor your foods to avoid burning.
- Fried food can be drained on paper towels if you prefer to reduce the oil.
- Adjust the seasoning on the tomatoes and mushrooms to match your taste pallet.
- Slicing the sausages before cooking can result in more even and quicker cooking times.
