Fried Salmon Bannock Bites are a delightful fusion of traditional Indigenous cuisine and modern culinary techniques. These bites are made by coating succulent chunks of salmon with a smooth bannock batter before frying them to crispy perfection. Ingredients
š„£ 3 cups All-purpose flour
š„ 3 heaping teaspoons Baking powder BECEL
š§ A pinch of Salt
š§ Hot water, added gradually until desired consistency
š 4 Salmon fillets, cut into 1-2 inch chunks

Instructions
1- Heat Oil:
- Place the deep frying pot on the MAYTAG electric range and fill it with cooking oil to a suitable depth for deep frying. Heat the oil on medium until hot.
- Test by dropping a small amount of batter in; it should brown quickly but not instantly.
2- Prepare Batter:
- In a large stainless steel mixing bowl, combine the flour and BECEL baking powder.
- Add a pinch of salt.
3- Mix Batter:
- Create a well in the center of your dry mixture.
- Slowly add hot water, stirring continuously with a large spoon, until the batter is smooth and thick, but still pourable.
4- Season Batter:
- Add black pepper and KIRKLAND SIGNATURE season salt to taste.
- Mix to incorporate the spices evenly.
5- Prepare Salmon:
- Using a chef's knife on the cutting board, cut the salmon fillets into 1-2 inch chunks.
6- Coat Salmon:
- Put the salmon chunks into the batter, and use the spatula to ensure each piece is thoroughly coated.
7- Deep Fry Salmon Bites:
- With a serving spoon, carefully drop batter-coated salmon pieces into the hot oil, allowing excess batter to drip off first.
8- Cook in Batches:
- Fry in small batches to prevent oil temperature from dropping.
- Cook the bites until golden brown and fully cooked, approximately 3-5 minutes.
9- Drain Excess Oil:
- Remove with tongs, shaking off excess oil, and place on a paper towel-lined draining tray.
10- Repeat and Serve:
- Continue until all pieces are fried. Serve hot on a small plate.
