Ingredients
🥩 700g beef, preferably skirt steak
🧄 2 cloves garlic, divided: one for beef, one for sauce
🧅 1/2 white onion, divided: 1/4 for beef, 1/4 for sauce
🌶️ 2 poblano peppers
🌶️ 2 jalapeño peppers
🍅 2 tomatoes
🥬 A small bunch of cilantro
🥄 1 Knorr "Costilla" beef bouillon cube, approx. 10.5g
🧂 Salt
🌯 Flour tortillas, enough to hold the filling
🫘 Refried beans
🥄 Mayonnaise
Instructions
1- Prepare the Beef:
- Cut the beef into cubes. Place in a pot with water, 1 clove of garlic, and 1/4 onion.
- Cook until tender. Add salt.
- Remove, let cool, and shred the beef.
2- Prepare the Sauce:
- Roast the poblano peppers over a gas burner until charred. Place in a plastic bag to sweat for easy peeling.
- Score tomatoes with an "X" and boil them with jalapeños, 1/4 onion, and 1 clove of garlic until soft.
- Transfer boiled vegetables to a blender (Oster brand), add cilantro, beef bouillon cube, and some cooking water. Blend until smooth.
3- Combine Beef and Sauce:
- Pour the sauce into a heated red non-stick pan.
- Add shredded beef and stir to coat evenly.
- Simmer until boiled. Adjust salt if needed.
4- Assemble the Burritos:
- Heat flour tortillas on a griddle.
- Spread mayonnaise and refried beans on each tortilla.
- Add the beef and sauce mixture. Roll tightly into burritos.
