Instructions

1- Preparation:

  • Clean and peel the lotus roots carefully. Using a mandolin or a sharp knife, slice them thinly. Also, slice the jalapeños and red onion into thin slices.

2- Assembling the Layers:

  • Grease a skillet with a small amount of avocado oil, spreading it evenly using a paper towel. Begin by placing a layer of the sliced lotus root, followed by a layer of jalapeño and red onion slices. Season with salt and black pepper to taste. Repeat the layers once more, then sprinkle 1⁄4 of the crumbled Cotija cheese over the layers.

3- Creating the Sauce:

  • In a blender, combine the Roma tomatoes, garlic cloves, fresh cilantro, 1⁄4 cup of avocado oil, and water. Blend until smooth to form a sauce.

4- Baking:

  • Pour the blended sauce over the lotus root stack in the skillet. Add the remaining crumbled Cotija cheese on top of the stack. Bake the assembled stack in a preheated oven at 385°F (195°C) for 20 minutes.

5- Final Touch:

  • Once baked, transfer the skillet to the stovetop and cook over medium heat until the liquid in the pan evaporates.
