Ingredients
🥩 1.5 kg "Guachalomo" beef thinly sliced (chuck roll/sirloin butt)
🧂 2 tablespoons of salt plus extra to taste (generic)
🧄 3 cloves of garlic crushed
🫒 2 tablespoons of cooking oil (generic)
💧 2 cups of water
🥬 1 kg of green beans cut into flat pieces (Frutos del Maipo)
🍞 8 round bread buns similar to "pan frica"
🍅 3 medium-sized tomatoes sliced
🥑 3 avocados mashed
🥄 4 tablespoons of mayonnaise (generic)
Instructions
1- Prepare the Beef:
- Trim and slice the "Guachalomo" beef into thin pieces. Remove excessive fat and membranes.
- On a cutting board, pound each beef slice tender with a wooden pestle.
2- Season the Beef:
- Crush garlic with a pinch of salt using a mortar and pestle to make a paste.
- Rub the garlic paste over the beef pieces. Let the meat rest for a few minutes to absorb the flavors.
3- Cook the Green Beans:
- Place green beans in a red pot and cover with water. Add 2 tablespoons of salt.
- Boil for 10 minutes, then drain using a yellow plastic colander.
4- Sear and Pressure Cook the Beef:
- Heat cooking oil in a non-stick frying pan over medium-high heat.
- Sear beef slices for approximately 5 minutes per side. Cook in batches if necessary.
- Transfer seared beef to a pressure cooker, add water, and pressure cook for 30 minutes until tender.
5- Prepare Bread and Toppings:
- Warm sandwich buns in the oven.
- Slice tomatoes and mash avocados to a creamy consistency.
6- Assemble the Sandwich:
- Slice a warm bread bun horizontally and layer with cooked beef.
