Ingredients

Instructions
1- Prep the Ingredients:
- Boil the potatoes in a pot of salted water until tender, about 10 minutes. Drain and set aside.
- Sauté the onions and garlic in the vegetable oil over medium heat in a skillet until translucent.
2- Prepare the Filling:
- In a large bowl, combine the cooked potatoes, sautéed onions and garlic, shredded chicken, parsley, cumin, corn, salt, and pepper. Mix well to ensure even distribution of flavors.
3- Assemble the Tucumanas:
- Lay each dough disc on a clean surface. Place a generous spoonful of filling in the center of each disc.
- Fold the dough over the filling to form a half-moon shape and seal the edges by pressing with a fork or pinching, ensuring the tucumanas are tightly closed.
4- Cook the Tucumanas:
- Preheat the oven to 375°F (190°C).
- Brush the top of each tucumana with the beaten egg for a golden finish.
- Place the tucumanas on a baking sheet lined with parchment paper and bake for 20-25 minutes or until the dough is golden brown.
5- Serve:
- Serve hot with a side of aji amarillo or your favorite hot sauce for an authentic Bolivian touch.
