Ingredients

๐ 1 package tripe, similar packaging as cow's feet
๐ฟ 1 bunch cilantro, washed

1 medium-sized onion, peeled, washed, and sliced into large pieces
๐ฅ 2 medium-sized potatoes, peeled and cut into pieces
๐ฅ 5-7 whole okra, cut into halves
๐ 1 teaspoon oregano leaves, Brand: Kroger
๐ง 1 tablespoon salt, Brand: Kirkland Pure Sea Salt
๐ถ๏ธ Black pepper, Brand: Kirkland Fine Ground Malabar Black Pepper
๐งด White vinegar, for rinsing meat, Brand: Heinz All Natural Distilled White Vinegar
๐ถ๏ธ 2 teaspoons recado, or paprika as a substitute
Instructions
1- Prepare the Meats:
- Unpackage and place the cow's feet and tripe in a large metal bowl.
- Rinse with Heinz white vinegar and water to clean thoroughly. Drain the excess water.
2- Cut the Meats:
- On the cutting board, dice the tripe and cut the cow's feet to preferred sizes.
3- Pressure Cook the Meats:
- Transfer the meats to the Power Pressure Cooker XL.
- Add onion slices, cilantro, and oregano leaves.
- Fill with water, covering the ingredients.
- Secure the lid, set to "seal," and use the "Chicken/Meat" setting for 1 hour. Repeat twice for a total of 3 hours.
4- Finish on Stovetop:
- Open the cooker and transfer contents carefully to a large pot.
- Bring to boil on a gas burner.
5- Add Vegetables and Seasoning:
- Add potato chunks and okra halves.
- Stir in salt, black pepper, and recado or paprika.
- Simmer until vegetables soften and stew reduces for a robust flavor.
6- Serve:
- Ladle the hot soup into bowls and enjoy!
