Ingredients

🧂 2 tablespoons coarse salt
🌿 1 tablespoon dried oregano
🥔 4 large potatoes, russet
🧈 2 tablespoons unsalted butter
🌿 1 teaspoon dried rosemary
🧂 1 teaspoon salt
🧄 1 teaspoon garlic powder
🧀 1/2 cup grated Parmesan cheese
Instructions
1- Prep the Steak:
- Ensure the flank steak is at room temperature. Pat it dry with paper towels. Season both sides generously with coarse salt and oregano.
2- Prepare the Grill:
- Light up your Tromen Gaucha Grill, creating a two-zone heat setting (one side high heat, the other low heat). Let it preheat for about 10 minutes.
3- Cook the Steak:
- Place the steak on the high-heat side of the grill. Sear each side for 3-4 minutes to get a nice crust.
- Move the steak to the low-heat side and cook for another 15-20 minutes or until desired doneness medium-rare recommended, internal temp 130°F/54°C.
- Once cooked, rest the steak for 10 minutes before slicing.
4- Prep the Potatoes:
- Preheat your Tromen Wood-Fired Oven to 400°F approximately 200°C.
- Wash and slice the potatoes into wedges.
- In a large bowl, toss potato wedges with melted butter, salt, garlic powder, and rosemary.
- Spread them on a baking tray in a single layer. Sprinkle with Parmesan cheese.
5- Bake the Potatoes:
- Bake in the preheated oven for about 30-35 minutes or until golden and crisp, turning once halfway through.
6- Serve:
- Slice the rested steak against the grain and serve alongside the baked potatoes. Enjoy with friends and family!
