Ingredients:
- 2 pounds ground turkey
- 2 15-ounce cans kidney beans
- 16 ounces tomato sauce (2 8-ounce cans)
- 20 ounces diced tomatoes with green chilis (2 10-ounce cans)
- 1 cup cheese, shredded (for garnish)
- Green onions, chopped (for garnish)
- 3 tablespoons homemade chili seasoning mix (recipe below)
- 2 tablespoons vegetable oil
For the Homemade Chili Seasoning Mix:
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
1. In a small bowl, combine all the ingredients for the Homemade Chili Seasoning Mix. Stir until well mixed. Set the seasoning aside.
2. Heat oil in a large pot or Dutch oven over medium-high heat. Once hot, add the ground turkey and cook, breaking it up with a wooden spoon until no longer pink and cooked through.
3. Once the turkey is browned, reduce the heat to medium and add 3 tablespoons of the homemade chili seasoning mix to the pot. Stir until the turkey is coated with the seasoning and cook for another minute to allow the flavors to combine.
4. Add tomato sauce and diced tomatoes with green chilis to the pot. Stir to combine.
5. Drain and rinse the kidney beans and add them to the pot. Stir the mixture until everything is evenly distributed.
6. Bring the chili to a simmer and reduce the heat to low. Cover and let it cook for at least 30 minutes, stirring occasionally. For a deeper flavor, allow the chili to simmer for up to 1-2 hours.
7. Once the chili is cooked, do a taste test and adjust the seasoning if necessary. Then turn off the heat.
8. Serve the chili hot, garnished with shredded cheese and chopped green onions on top.

Cooking Tips:
- Customizing the heat level of your chili is easy, just adjust the amount of chili powder in your seasoning mix to suit your preference.
- If the chili thickens too much during cooking, add a bit of water or broth to reach your desired consistency.
- Feel free to add other vegetables like bell peppers or corn for added texture and nutrition.
