Ingredients:
- Homemade Spätzle (prepared in advance)
- 1/2 medium Onion, finely sliced
- 1 tbsp Butter or Butterschmalz (clarified butter)
- 100g Emmental cheese, grated
- 100g Bergkäse cheese, grated (alternatively Comté, Appenzeller, Gouda, or your cheese of choice)
- A splash of Homemade Vegetable Broth
- Salt, to taste
- Pepper, to taste
Instructions:
1. Prep the Cheese: Grate the Emmental and Bergkäse into a bowl. You can choose other types of cheese if preferred—share your choice in the comments!
2. Sauté the Onions: In a small cast-iron skillet, melt the butter over low heat. Add the finely sliced onions and sauté until they are golden brown.
3. Cook the Spätzle: Add the previously made homemade spätzle to the skillet with the onions. Thanks to being oiled, the noodles should be separate and not sticky.
4. Season: Season the spätzle and onions with a little salt and pepper, adjusting to your tastes.
5. Add the Cheese: As the spätzle turns golden, sprinkle the grated cheese over the top, covering the noodles evenly.
6. Broth and Melt: Pour a splash of the homemade vegetable broth over the spätzle and cheese mixture. Stir gently and cook until the cheese melts and the broth reduces, creating a deliciously creamy sauce.
7. Crisp the Bottom: Let the käsespätzle cook undisturbed until a crispy crust forms on the bottom. Use a wooden spoon to scrape it up—this is considered a prized part of the dish!
