Ingredients

🍍 Peels from 1 pineapple
🌟 1 anise star
🌿 2 cloves

🍈 1 cup piloncillo (or substitute with brown sugar to taste)

Instructions

1- Prepare the Pineapple Peel:

  • If using an organic pineapple, you can skip washing the peel unless visibly dirty. For non-organic pineapples, wash the peel thoroughly to remove any residues.

2- Combine Ingredients:

  • In a large glass jar or container, combine the pineapple peels, anise star, cloves, cinnamon stick, and piloncillo.
  • Pour in enough water to completely cover the ingredients.

3- Fermentation Process:

  • To keep the peels submerged, place a small weight or a piece of oil-wrapped weight inside a clean seed bag and place it on top of the peels.
  • Cover the jar with a clean cloth, securing it with a rubber band or string, to allow air to circulate while preventing debris from entering.

4- Ferment the Tepache:

  • Let the mixture sit at room temperature in a cool, shady spot for approximately one week. During this time, natural fermentation will occur.

5- Strain and Serve:

  • After one week, use a strainer to remove the solids from the liquid.
  • If desired, add more brown sugar to taste for sweetness and additional water or ice for a lighter flavor.
  • Enjoy your homemade tepache chilled, reminiscent of traditional Mexican street beverages.
