Ingredients

š 5g curry powder

Instructions
1- Prepare the Base:
- Heat the sunflower oil in a large non-stick wok or pan over medium heat.
- Add the chopped onions and fry until they turn golden brown and caramelized.
2- Add Aromatics:
- Stir in the garlic and cook for an additional 2 minutes until fragrant.
3- Spice it Up:
- Mix in the red chili powder, salt, and curry powder.
- Stir well for about a minute to release the spices' aromas.
4- Incorporate Tomatoes:
- Add the halved cherry tomatoes and fry for 3 minutes.
- Allow the flavors to meld.
5- Add Mung Beans:
- Introduce the washed and soaked mung beans into the pan.
- Mix thoroughly.
6- Simmer Mixture:
- Pour in the water and stir.
- Cover the pan with a lid and let the mixture simmer for 10 minutes.
7- Add Rice and Cumin:
- Layer the washed and soaked rice over the mung bean mixture.
- Sprinkle with cumin seeds and stir gently for 2 minutes until well combined.
8- Steam:
- Use a wooden skewer or chopstick to make holes in the rice, promoting even steaming.
- Cover with the lid and let it simmer for 15 minutes.
9- Final Steam:
- Stir the rice again, remake holes, and cover with aluminum foil followed by the lid to create a seal.
- Steam on low flame for 45 minutes.
10- Serve:
