Ingredients
🥩 1 kg Beef "Flecha" Thin Short Ribs with Bone seasoned with salt and pepper
🥩 1 kg Beef "Aguja Norteña" Boneless Chuck Roll/Short Rib thinly sliced, seasoned with salt and pepper
🌭 1 package 8 sausages 800g Kir Salchicha para Asar Brand: Kir
🥑 2 medium Avocados for guacamole
🌵 2 Nopales Cactus Paddles
🧀 200-300g Shredded Cheese visually estimated for quesadillas
🌶️ 3-4 whole Jalapeño Peppers
🧅 1 whole large White Onion
🧄 1 whole head of Garlic with a drizzle of olive oil
🌽 Approximately 10-12 yellow Corn Tortillas for tacos and quesadillas
🌮 6-8 Empalmes Stuffed Corn Tortillas filled with "carne seca con chile" or "frijoles con queso"
🧂 Salt: Regular table salt
🫑 "Mixtura de Pimentas" peppercorns Brand: Alpnut
🫒 Olive Oil: A drizzle for the garlic head
Instructions
1- Prepare the Grill:
- Start your charcoal grill and allow the coals to heat up until they're mostly grey and glowing hot.
2- Season the Meats:
- Lay the beef "flecha" and "aguja norteña" on a plate.
- Sprinkle both sides generously with salt and Alpnut mixed peppercorns, then set aside.
3- Prep Garlic and Onion:
- Trim the head of garlic and drizzle with olive oil. Add salt and pepper, then wrap in aluminum foil.
- Grill the onion whole for natural sweetness.
4- Grill Vegetables and Aromatics:
- Place the foil-wrapped garlic on the cooler side of the grill and the whole onion on the hot coals.
- Grill the nopales and jalapeños directly on the grill grate until soft with roasted marks.
5- Grill Sausages:
- Grill the Kir sausages until browned and slightly charred.
6- Grill "Aguja Norteña":
- Place thin slices on the grill for about 3 minutes per side. Remove and slice into fajita strips.
7- Grill "Flecha":
- Cook the "flecha" for about 3 minutes per side, watching for flare-ups. Remove when done to taste.
8- Prepare Guacamole:
- Mash avocados to make simple guacamole.
9- Grill Empalmes and Quesadillas:
- Heat and slightly crisp the empalmes, then combine tortillas with cheese on the grill to create quesadillas.
10- Assemble and Serve:
