Instructions:
1. Begin by roasting your sweet potato in the oven at 400 degrees F for about 60 minutes. Poke a few holes in the sweet potato before roasting to allow steam to escape.
2. Once your sweet potato is soft and roasted, peel and mash it in a bowl using a potato masher or fork until smooth.
3. Heat a large skillet over medium-high heat and add 2 teaspoons of olive oil. Add the diced onion and bell pepper to the skillet, sprinkle with a quarter teaspoon of salt, and sauté until the vegetables are soft and golden, about 6-8 minutes. Stir occasionally for even cooking.

5. In a large mixing bowl, combine the black beans with the mashed sweet potato and use the potato masher to partially mash the mixture, leaving some beans whole for texture.

7. Add the beaten egg (or flax egg) and dry bread crumbs to the bowl and mix until the mixture starts to hold together.
8. Form the mixture into burger patties with your hands, pressing them together firmly.
9. Heat a lightly oiled pan over medium heat and add the patties, cooking on each side for about four to five minutes or until nicely browned and heated through.
