š½ 10-15 small Corn Tortillas (Taqueras)
For the Green Salsa:
š 8 Tomatillos
š¶ļø 4 Serrano Peppers
š§ 2 Garlic Cloves
š¶ļø 4-5 dried Chile de Arbol
šæ 1 bunch Fresh Cilantro
š§ Water, for boiling salsa ingredients

For the Garnishes:

1/2 medium White Onion, diced
šæ 1 bunch Fresh Cilantro, chopped
š Several Limes, cut into quarters
Instructions
1- Prepare the Bistec:
- Lay the bistec (one "del cero" and one "del siete") on a cutting board and remove bones and fat.
- Cut the steak into smaller pieces and season with fajita seasoning and salt.
- Allow the meat to rest briefly.
2- Prepare the Green Salsa:
- Boil tomatillos, serrano peppers, garlic, and chiles de arbol in a small pot until the tomatillos soften and change color.
- Cool slightly, then blend with some cooking liquid, adding salt to taste.
- Mix in fresh cilantro until the salsa is smooth and bright green.
3- Prepare the Complements (Garnishes):
- Finely dice the onion and cilantro; prepare lime wedges. Place each in small metal containers.
4- Cook the Bistec and Caramelized Onions:
- Heat lard in a frying pan over medium-high heat, cooking bistec to develop a crust, then cover to tenderize.
- Remove meat when cooked, add sliced onion to pan, and caramelize in meat juices.
5- Chop and Reheat Bistec:
- Finely dice cooked bistec, return to the pan to keep warm.
6- Assemble the Tacos:
- Warm tortillas on a griddle, using oil for pliability.
- Place a generous portion of bistec on two stacked tortillas.
- Garnish with salsa, onions, cilantro, lime juice, and caramelized onions.
