🥥 3 cups Cassava Flour, NOUVEAU FOUFOU DU CAMEROUN brand, Farine de Manioc torréfiée
Instructions
1- Prepare the Water:
- Fill a medium to large stainless steel cooking pot halfway with water.
- Adjust based on the desired quantity of Funge.
- Place the pot on a gas cooktop and heat until the water is nearly boiling.
2- Initial Flour Mix (Elele):
- Gradually add the corn flour (Fubá de Milho) into the hot water.
- Immediately start vigorous stirring with a mecharico or a sturdy wooden spoon.
- Ensure continuous motion to prevent lumps.
- Cook this mixture for about 10-15 minutes until it thickens into a porridge-like elele.
3- Add Cassava Flour:
- Add cassava flour (Fubá de Bombó/Farinha de Mandioca) in larger quantities.
- No need for a gradual approach; pour it directly into the elele.
4- Mixing Technique:
- Quickly shift to vigorous stirring and beating.
- Sit on a stool if possible for better leverage.
- Brace the pot between your feet and hold the mecharico with both hands.
- Use circular motions to thoroughly integrate the flour, breaking all lumps.
5- Final Consistency:
- Continue the process until you achieve a homogeneous, smooth, dough-like texture.
- Adjust firmness to your preference.
6- Transfer and Serve:
- Remove the pot from the heat.
- Transfer the funge to a serving dish, mounding it smoothly.
