🧅 1 onion, chopped/grated, approximately 150g
🍅 150 ml tomato purée
🥫 1 cup pre-cooked chickpeas
🥔 1 whole potato
🥕 1 whole carrot
🥒 1/2 large courgette, zucchini
🧄 3 cloves garlic, minced
🌿 2 tablespoons fresh coriander, chopped
🌾 150 g frik, green wheat
🍗 Pieces of meat, beef cubes and 2 chicken drumsticks
🍅 1 teaspoon concentrated tomato paste
🌿 1/2 tablespoon dried coriander
🌶️ 1/2 tablespoon black pepper
🌿 1/2 tablespoon Ras El Hanout
🍬 1/2 tablespoon sugar, equivalent to a sugar cube
🌶️ 1 teaspoon paprika
🌿 1 teaspoon ginger
🧂 Salt, La Baleine Sel de Mer Gros Espaces
🌻 2 tablespoons Lesieur Huile de Tournesol, Sunflower Oil
💧 1.7 liters water
🌶️ 1 whole green chili, optional
Instructions
1- Sauté Ingredients:
In a large cooking pot, heat 2 tablespoons of sunflower oil over medium heat. Add the chopped onion, beef cubes, and chicken drumsticks.
Incorporate minced garlic, chopped fresh coriander, chickpeas, and tomato purée. Mix well.
2- Prepare Pot:
Add the whole potato, carrot, and courgette into the pot.
Stir in dried coriander, black pepper, Ras El Hanout, paprika, ginger, and salt. Mix everything together.
3- Enhance Flavor:
Add 1 teaspoon of concentrated tomato paste and a sugar cube. Stir until all ingredients are well combined.
Allow the mixture to simmer for about 6 minutes, enhancing the flavor profile.
4- Add Water and Boil:
Pour approximately 1.7 liters of water into the pot, ensuring the water is seasoned with salt.
Increase heat to bring the soup to a boil for 5-10 minutes.
5- Prepare Frik:
- In a separate bowl, rinse the frik twice with water, using a strainer to remove impurities and excess starch.
6- Cook Frik:
- Add the rinsed frik to the pot. Lower the heat and let it simmer gently for about 20 minutes, ensuring meats and frik are cooked through.
7- Process Vegetables:
Remove the potato, carrot, courgette, and chicken drumsticks from the pot once tender.
In a blending container, combine the cooked vegetables with half a glass of soup broth. Blend until smooth.
8- Shred Chicken:
- Debone and shred the chicken drumsticks into small, tender pieces.
9- Combine and Finalize:
Return the vegetable purée and shredded chicken to the soup. Stir thoroughly.
Add 1 tablespoon of fresh chopped coriander, and bring the soup to a final boil for 1 minute.
For added flavor, immerse a whole green chili into the soup for a subtle spice infusion.
