Ingredients
🌽 6 corn tortillas, yellow corn preferred
🌰 2 cups red beans, prepared into a sauce
🥬 1 small cabbage, finely shredded
🧅 1 white onion, diced
🌿 1 bunch cilantro, chopped
🍋 1 fresh lime, juiced
🧀 1 cup Dutch cheese, grated; Happy Cow cheese as an alternative
🛢️ 1 cup cooking oil, for frying tortillas
🌶️ 1 homemade pepper sauce, optional
🍅 1 ketchup, optional, squeeze bottle
Instructions
1- Prepare the Tortillas:
- Heat cooking oil in a cast-iron frying pan over medium heat.
- Fry each corn tortilla until light golden and slightly crispy.
- Use metal tongs to handle them and drain excess oil on paper towels.
2- Make the Cabbage Topping:
- In a Pyrex mixing bowl, combine finely shredded cabbage, diced white onion, and chopped cilantro.
- Squeeze fresh lime juice over the mixture and toss to coat evenly.
3- Grate the Cheese:
- Use a metal box grater to grate the Dutch cheese or Happy Cow cheese finely.
4- Assemble the Garnaches:
- Place the fried tortillas on decorative serving plates.

- Add a portion of the cabbage mixture on top of the bean sauce.
