Ingredients
š§ 2 cups 500 ml Water
š 1 cup 200 gr Short-grain white rice
š„ 1 cup 250 ml Cow's Milk
š§ 1 tablespoon Butter
š§ Salt, added for flavor
š§ 60 gr Asiago DOP Fiordimaso cheese, cut into small cubes
Instructions
1- Boil Water:
- In a T-Fal pot, bring 2 cups of water to a boil.
2- Prepare Rice:
- Wash 1 cup of rice in a metal bowl until the water runs clear.
3- Cook Rice:
- Add the rice to the boiling water.
- Cover the pot with the T-Fal lid and let it cook for 5 minutes on medium heat.
4- Prepare Cheese:
- While the rice cooks, cut Asiago cheese into small cubes and set them aside in a small white bowl.
5- Stir Rice:
- After 5 minutes, uncover the pot, stir the rice with a wooden spoon, then re-cover and cook for another 5 minutes.
6- Check and Adjust:
- Check rice doneness.
- If still firm, add an extra half cup of water and continue cooking until tender.
7- Add Butter:
- Stir in 1 tablespoon of butter until melted and fully incorporated.
8- Incorporate Milk:
- Pour in 1 cup of milk, stirring continuously until combined.
- Taste and add salt to your liking, remembering the cheese adds additional saltiness.
9- Cook with Milk:
- Cover the pot again and cook for about 7 minutes until the milk has evaporated slightly and the rice becomes creamy.
10- Melt Cheese:
- Turn off the heat, add the cheese cubes, and stir gently until melted and fully mixed with the rice.
11- Serve:
- Plate the Arroz con Queso in a red oval ceramic serving dish and enjoy it with churrasco, asado, or yuca.
