Instructions
1- Clean and Soak Beans:
- Sort 0.5 kg of black beans to remove any debris.
- Place in a bowl, cover with water, and optionally add cloves. Soak overnight.
2- Prepare Pork:
- Cut 0.5 kg pork into bite-sized pieces.
3- Cook Beans and Pork:
- Combine soaked beans, pork, and half an onion in an Oster Electric Pressure Cooker.
- Add approximately 2 liters of water until covered.
- Cook on Normal Pressure for 50 minutes.
4- Prepare Roasted Salsa:
- On a non-stick pan, roast tomatoes, half onion, garlic, and chiles.
- Use a stone molcajete to grind roasted garlic with salt, adding onion, tomatoes, and deseeded chiles to achieve a chunky consistency.
5- Prepare Garnishes:
- Dice radishes and the remaining half onion.
- Chop cilantro, slice avocado, and halve limes.
6- Finish the Beans and Pork:
- Release cooker pressure, check meat and bean tenderness.
- Simmer with epazote; optionally add chicken bouillon.
- Season with salt.
7- Serve:
- Ladle frijol con puerco into bowls alongside white rice.
- Offer diners fresh garnishes and roasted salsa.
