Ingredients
🌾 250g all-purpose flour
🍞 4g dry yeast
🧂 3g salt
🍬 5g sugar
🫒 25ml vegetable or olive oil
💧 150ml water
🥩 0.5kg pork steaks
🍋 Juice from 3 limes
💧 Water 50ml
🌿 1 teaspoon cumin
🌿 1 teaspoon oregano
🌶️ 1 teaspoon black pepper
🧂 Salt 1 teaspoon
🌿 1 bunch fresh parsley
🧄 1 clove garlic
🧅 1 white onion
🛢️ Oil 25ml
Instructions
1- Prepare the Arab Bread Dough:
Warm 150 ml of water until lukewarm. Add 4g dry yeast and 5g sugar. Stir and let sit for about 15 minutes until foamy.
Place 250g flour on a clean surface. Make a well in the center, sprinkle 3g salt around the edges.
Pour activated yeast and 25ml oil into the well. Mix and knead for about 5 minutes until smooth and elastic.
Lightly oil a container, place dough inside, and cover. Let it proof for about 30 minutes or until doubled in size.
Punch down dough to release air. Divide into 8-10 balls.
Roll each dough ball into a thin, round tortilla.
Heat a pan on medium-high. Cook each bread for about 1 minute per side until puffed and golden spots appear. Set aside.
2- Prepare the Pork Marinade:
In a blender, combine lime juice, water, cumin, oregano, black pepper, salt, and garlic. Blend until smooth.
Finely chop parsley.
Place pork in a container. Pour marinade over, add parsley and half the sliced onion. Mix well.
Marinate in the refrigerator for 1 to 1.5 hours.
3- Cook the Pork and Caramelize Onions:
Heat a pan with oil until hot. Cook pork slices for 2-2.5 minutes per side until golden. Remove and slice into strips.
In the same pan, sauté the remaining onions until soft and caramelized.
4- Assemble Tacos Árabes:
Place cooked bread on a serving plate.
Fill each bread with sliced pork and caramelized onions.
Drizzle with garlic cream and chipotle sauce.
Serve immediately.
