Ingredients
🥖 1 kg flour, any standard supermarket brand
🧂 20 grams fine salt
💧 600 grams cold water
🍞 30 grams fresh yeast, any generic fresh yeast
🛢️ Vegetable oil for brushing, any preferred brand
Instructions
1- Dissolve Yeast:
- In a large white enamel mixing bowl, pour 600 grams of cold water.
- Crumble 30 grams of fresh yeast into the water and dissolve by hand.
2- Prepare Dry Ingredients:
- In a separate stainless steel mixing bowl, mix 1 kg of flour with 20 grams of fine salt.
3- Create Dough:
- Combine the flour mixture with the yeast solution.
- Mix by hand to form a cohesive dough.
4- Knead:
- On an unfloured wooden cutting board, knead the dough for at least 10 minutes using a stretching and folding technique.
- Rest if needed and knead until smooth.
5- First Rest:
- Form the dough into a ball, place it in a mixing bowl, and cover with "Aluplast 300" plastic wrap.
- Let it rest for 10 minutes at room temperature (~23°C/73°F).
6- Portion and Shape:
- Use a dough scraper to divide the dough into 100-gram portions.
- Shape two portions into smooth balls and press them together to form a double marraqueta.
7- Mark and Rest:
- Place the shaped dough on a kitchen towel.
- Brush with vegetable oil to prevent drying.
- Indent the center with a 1.5 cm-diameter wooden dowel/stick.
- Cover and rest for another 10 minutes.
8- Final Proofing:
- Flip the marraquetas to maintain the indent shape.
- Let them proof under plastic wrap for 30 minutes at ~23°C.
9- Preheat and Prep Oven:
- Preheat your oven to 210°C (410°F).
- Prepare a baking tray by lightly dusting with flour.
10- Bake with Steam:
- Before baking, spray water from a green plastic spray bottle into the oven for steam.
- Bake marraquetas for 18-20 minutes until golden and crisp.
11- Cool:
- Transfer to a wire rack to cool completely.
