Ingredients
π₯ 3 pieces of potatoes
π₯¬ 1/4 piece of cabbage
π₯ 150g bacon cut into approximately 5mm thick pieces
π§ 2 cloves of garlic minced
π« 1-2 tablespoons of olive oil

Instructions
1- Preparation of Ingredients:
- Boil unpeeled potatoes until they are very soft. Peel them once cooked, and mash thoroughly.
- Chop cabbage and boil until it becomes very soft and tender.
- Dice bacon into approximately 5mm pieces.
- Mince the garlic cloves.
2- Fry Bacon and Garlic:
- Heat a de Buyer carbon steel frying pan over medium-high heat.
- Add the diced bacon; fry until crispy and the fat is rendered. Adjust heat to low to prevent burning.
- Add the minced garlic towards the end of frying the bacon; sautΓ© until fragrant and lightly browned.
- Remove bacon and garlic, reserving half for topping.
3- Prepare the Potato and Cabbage Mixture:
- In a large stainless steel mixing bowl, combine mashed potatoes and cabbage.
- Season with salt and white pepper; mash the mixture until well blended.
4- Combine Ingredients and Cook the Trinxat:
- Place the frying pan back on the stove over medium-low heat; add 1-2 tablespoons of olive oil.
- Incorporate the mashed potato and cabbage mixture into the pan.
- Mix in half of the cooked bacon and garlic, integrating the pan's browned bits for added flavor.
- Season the mixture with additional salt and pepper if needed.
