Ingredients
🌿 2 tablespoons Bertolli Olive Oil, for sautéing
🧅 2 medium onions, diced
🥩 1 pound ground beef, preferably 80% lean
🌿 A large bunch fresh parsley, chopped
🍅 2 cups blended soft ripe tomatoes or equivalent of Pomi tomato sauce
🍚 1 cup Mahatma white rice
💧 1 cup filtered water
🧂 1 teaspoon Morton salt
⚫ 1 teaspoon McCormick black pepper
🌿 1 teaspoon McCormick oregano
🌿 1 teaspoon fresh dill, chopped
🌶️ 6-7 bell peppers, assorted colors (green, yellow, orange, red)
Instructions
1- Prepare the Filling:
- Heat the Bertolli olive oil in a non-stick frying pan over medium heat.
- Add the diced onions and sauté until translucent.
2- Brown the Beef:
- Add ground beef and cook until well-browned.
- Stir and break it apart with a wooden spoon.
3- Incorporate Herbs:
- Stir in the chopped parsley and dill.
- Toss well to combine.
4- Add Tomatoes and Rice:
- Pour in the blended tomatoes or tomato sauce and mix thoroughly.
- Stir in the Mahatma white rice and gradually add water to maintain a moist mixture.
5- Season and Simmer:
- Season with Salt, black pepper, oregano, and dill.
- Continue to cook until the rice is partially cooked and the mixture is thick.
6- Cooling:
- Remove from heat.
- Let the filling cool slightly.
7- Prepare the Bell Peppers:
- Wash and pat dry the bell peppers.
- Cut off the stems and carefully remove seeds and membranes.
8- Stuff and Bake:
- Spoon the filling into each bell pepper until almost full.
- Preheat the oven to 375°F (190°C). Arrange the stuffed peppers in a baking dish.
- Bake for 40-45 minutes, or until the peppers are tender and slightly charred.
