Chimarrão, a cherished tradition in South America, particularly in Southern Brazil, is a yerba mate infusion enjoyed for its bold, robust flavor. This recipe guides you in preparing an authentic "Mate do Sul" by focusing on the correct water temperature and infusion techniques, ensuring a rich, long-lasting drink.
Ingredients
🫖 Yerba Mate "Nativa À Vácuo" Quantity sufficient to fill approximately 2/3 to 3/4 of a cuia
💧 Water Heated to approximately 90°C enough to fill a thermal bottle and replenish the cuia multiple times
Instructions
1- Heat the Water:
- Fill the kettle with water and heat it on the stovetop until it begins to steam.
- Aim for around 90°C, ensuring it doesn't reach a rolling boil.
2- Transfer Water to Thermos:
- Pour the hot water into a thermal bottle to maintain its temperature.
3- Prepare the Cuia:
- Fill the cuia with yerba mate, covering about 2/3 to 3/4 of its volume.
- Cover the top of the cuia with a vira-mate, lid, or your hand.
- Gently shake or tap the cuia to settle the yerba mate on one side, creating a space.
4- Insert the Bomba:
- Carefully insert the metal straw into the empty space created by settling the mate.
5- Pour and Serve:
- Gradually pour hot water from the thermos into the cuia, targeting the area where the bomba is placed.
- Your chimarrão is now ready to be enjoyed. Sip directly from the bomba.
