Ingredients
- ๐ 6 fillets of trout
- ๐ฅ 150g carrots, julienned
- ๐ฅฌ 150g leek, sliced
- ๐ง Salt, pink salt visible in grinder
- ๐ถ๏ธ Black pepper, black peppercorns visible in grinder
- ๐ง 250g water
- ๐ท 80g white wine, 50g for sauce, 30g for papillotes
- ๐ Juice of 1/2 lemon
- ๐ซ 20g extra virgin olive oil
- ๐ง 20g butter
- ๐ถ 1 cayenne pepper, optional
- ๐ฟ Ground basil
Instructions
1- Prepare Papillotes:
- Lay individual pieces of parchment paper flat.
- Evenly distribute julienned carrots and sliced leeks on each piece.
- Season the trout fillets with salt and black pepper. Place one on top of the vegetables on each parchment.
- Sprinkle ground basil, drizzle each fillet with a portion of white wine (around 5g), extra virgin olive oil, and lemon juice.
- Fold and seal the parchment paper to form tight packets, ensuring no steam escapes.
- Arrange papillotes in the Varoma steaming attachment of your Thermomix.
2- Prepare Sauce Base (Thermomix):
- In the Thermomix mixing bowl, add 40g of the remaining carrots, 40g of leeks, 20g butter, a pinch of salt, and a cayenne pepper (if using).
- Close the lid and chop for 3 seconds at speed 5.
3- Cook Sauce Base:
- Scrape down the sides of your Thermomix bowl and cook for 4 minutes at 120ยฐC with a spoon speed setting.
4- Steam Fish with Sauce:
- After the sauce base is cooked, add 50g of white wine and 250g of water to the mixing bowl.
- Place the Varoma attachment with the papillotes on top of the Thermomix mixing bowl.
- Steam the fish for 15 minutes at Varoma temperature with spoon speed.
5- Finish the Sauce:
- Once steaming is complete, safely remove the Varoma container by opening the lid away from you to avoid steam burns.
- Attach the measuring cup (cubilete) to the Thermomix lid.
- Blend the sauce in the mixing bowl for 20 seconds at speed 8 until smooth and creamy.
6- Serve:
- Gently unwrap the trout fillets from the parchment.
- Serve the trout with its accompanying steamed vegetables.
- Generously drizzle the blended sauce over the plate for additional flavor.
