Refreshing Bulgarian Tarator Soup Made with Kiselo Mlyako
Tarator is a staple of Bulgarian cuisineβa cold, creamy cucumber yogurt soup that's both refreshing and revitalizing. Ingredients
π₯ 1 medium-sized cucumber
π₯ 200-250g Bulgarian Yogurt, ElBi BulgariKUM
π§ 150-200ml cold water
πΏ A small bunch of fresh dill
π§ 1 teaspoon salt
π» 1-2 tablespoons sunflower oil, Kaliakra
Instructions
1- Prepare the Cucumber:
- Wash and peel the cucumber using a vegetable peeler, ensuring all skin is removed.
- Slice the peeled cucumber in half lengthwise, then dice into small cubes, about 0.5 cm in size.
- Transfer the diced cucumber into a white, oval-shaped serving bowl.
2- Mix Yogurt and Water:
- Scoop 200-250g of Bulgarian yogurt, ElBi BulgariKUM, into a glass jar.
- Add a pinch of salt to the yogurt, approximately a teaspoon.
- Pour 150-200ml of cold water into the jar with yogurt and salt using a measuring glass.
- Stir the yogurt, salt, and water together until the mixture is smooth and has a milky consistency.
3- Combine Ingredients:
- Pour the thinned yogurt mixture over the cubed cucumbers in the serving bowl.
- Finely chop a small bunch of fresh dill and add to the soup.
- Drizzle 1-2 tablespoons of sunflower oil, Kaliakra, over the mixture.
- Stir all ingredients thoroughly with a metal spoon, ensuring they are well combined.
4- Chill and Serve:
- Place the bowl of Tarator in the refrigerator for at least 30 minutes to chill before serving.
