Double Cheese Birria Quesadilla

Ingredients:
🧀 2 cups shredded mozzarella cheese
🫓 2 large corn tortillas
🥩 1 cup cooked birria meat (prepared ahead)
🧅 1 small onion, chopped
🌿 ¼ cup fresh cilantro, chopped
🍋 1 lime, cut into wedges
🍲 1 cup birria broth (fat skimmed from the top)
🌶️ Optional: 1-2 jalapeños, sliced
Instructions:
Prep the Ingredients:
Chop the onion and cilantro. Set aside. If using jalapeños, slice them now.Heat the Pan:
Use a non-thick pan over medium heat. Use a bit of the skimmed birria fat to coat the pan, enhancing flavor.Assemble the Quesadilla:
- Dip one side of each tortilla into the birria broth, allowing it to absorb some flavor.
- Place the tortilla on the pan, broth side down.
- Sprinkle a generous amount of mozzarella cheese on one half of the tortilla.
- Add a layer of birria meat on top of the cheese.
- Add more mozzarella cheese on top of the meat.
- Fold the tortilla in half, covering the filling.
Cook the Quesadilla:
- Cook the quesadilla for about 3-4 minutes on one side until the cheese begins to melt and the tortilla is golden brown.
- Carefully flip the quesadilla and cook for another 3-4 minutes on the other side.
Prepare the Dipping Sauce:
In a small bowl, mix the remaining birria broth with chopped onion and cilantro. Squeeze lime juice into the broth for an added tangy touch.Serve:
Slice the quesadilla into wedges and serve hot with the birria dipping sauce on the side. For an added kick, include jalapeños.
