š 1 lb Rack of Lamb, 450 grams

1 Onion, sliced
š§ 2 cloves Garlic, minced
š„ 2 tablespoons Yogurt, plain
š« 1 tablespoon Vegetable Oil
š¶ļø 1/2 teaspoon Chili Flakes
šæ 1 teaspoon Cumin Powder
š° 1/2 teaspoon Cinnamon Powder
š« 1/2 teaspoon Ginger Powder
šæ 1/2 teaspoon Cardamom Powder, optional
š§ 1 teaspoon Salt
š 2 Lemons, sliced for garnish
š¶ļø Several Green Chilies, to garnish
Instructions
1- Prepare the Onion and Garlic:
- Squeeze excess moisture out from one sliced onion.
- Place it in a mixing bowl.
- Add the minced garlic cloves.
2- Make the Marinade:
- To the bowl, add vegetable oil, yogurt, chili flakes, cumin powder, ginger powder, cinnamon powder, cardamom powder, and salt.
- Mix well till you have a uniform, creamy paste.
3- Prepare the Lamb Chops:
- Cut a rack of lamb into individual chops.
- Massage them with some of the marinade in a glass marinating dish by Duralex France.
- Ensure they're well-coated.
- Use disposable gloves for cleanliness and ease.
4- Marinate:
- Cover with a lid, and refrigerate for 4 hours to let the flavors meld into the lamb.
5- Prepare the Grill:
- Preheat a charcoal BBQ grill until the coals are glowing red.
6- Cook the Chops:
- Thread the marinated lamb chops onto metal skewers.
- Place them on the grill.
- Grill for approximately 15 minutes, flipping frequently for even cooking.
7- Additional Grilling:
- Thread lemon slices and green chilies onto separate skewers and grill alongside the lamb for a smoky garnish.
8- Serve:
- Once grilled to perfection, remove the lamb chops from the skewers.
- Arrange the chops on a serving plate, garnished with grilled lemon slices and green chilies.
